DESCRIPTION: Culinary Arts and Sciences I is designed for students interested in developing skills and gaining basic knowledge in the various areas of food preparation for entry-level employment in institutional and restaurant food service. Students gain skills in cooking, baking, garde mange, table service, food handling and service, sanitation and safety, use of equipment, menu construction, and food purchasing. A chest X-ray or tuberculin skin test is required. |
